Decaf is definitely NOT an afterthought for us. We take as much care in sourcing our decaf coffee as we do everything else.

Our new relationship with the folks at Cedefihuila in Colombia has been a very fruitful one. Huila's particular geographic orientation lends itself an extended harvest cycle that also happens occur at the opposite time of year from many of our other sourcing partners; both Colombian and throughout greater Latin America. As we have more traditionally been seeing slight fade in the coffee offerings this time of year, we are are very excited to be bringing you a coffee harvested only seven months prior. This estate cuvèe has wonderful acidity and a lovely sweet finish. 

Colombian producers are responsible for picking of the coffee cherry at peak of ripeness, sorting the coffee cherry qualities, de-pulping, fermentation, and then drying. Farmers then bring the parchment to a local mill to be graded for size, quality, and finished. At the Cadefihuila cooperative dry mill, producers have the option of selling their parchment to the mill to have it blended with other local offerings and sold as a regional cuvèe. They can also pay to have their coffee finished so that it can be ready for export to direct buyers. This is a flexibility that we do not often see in milling operations and truly empowers the growers to have a say in how their coffee is finished and presented to the world.

ORDERING INFORMATION

All bags are 12 ounces. Orders received by end of day Wednesday will be roasted and shipped that same week. If received after, it will be roasted/packed the following week.
