Producer: The Silva Family
Region: Chalchuapa, El Salvador
Varietal: Batian
Process: Double Anaerobic Washed
Elevation: 1450 - 1675 meters
The Apaneca-Illamatepec Mountain Range houses the Silva family's most remote farm, La Siberia. It is so named because of the endemic cool weather caused by the prevailing winds coupled with the high altitude. The long maturation season allows for beautiful coffee cherry development and breadth of potential in the finished cup.
Batian is an exciting new varietal from La Siberia. The varietal is known for its development for Kenya coffee farmers. Rafa, Carmen and Rafael’s oldest son, has been experimenting with planting different seed stock that is found in other exceptional coffee growing areas. He has had great success, and the careful harvest and meticulous detail to the processing shines in the final cup.
Tasting notes: Bright, Full Body, Bing Cherry
